Lemon-Garlic Fish

Mushroom Rice and Steamed Green Beans

Ingredients

  • 2 (6-oz) tilapia fillets
  • 1 Tbsp all-purpose flour
  • 2 Tbsp butter
  • 1 clove garlic, minced
  • ¼ cup white wine
  • ½ cup chicken broth
  • ½ tsp lemon zest
  • ½ Tbsp fresh lemon juice
  • 1 Tbsp chopped fresh parsley

Instructions

  1. Season fish lightly with salt and pepper. Dredge in flour to coat.
  2. Melt butter in a large nonstick skillet over medium-high heat. Add fish, and cook until browned on both sides. Remove from skillet.
  3. Add garlic to skillet; cook 30 seconds. Add wine, and cook 1 minute. Add broth; return fish to skillet, and cook 2 to 3 minutes or until fish flakes and sauce is thickened. Stir in lemon zest, juice, and parsley.

  • ½ cup long-grain white rice
  • 1 Tbsp butter
  • ¼ cup chopped onion
  • ½ (8-oz) pkg sliced mushrooms
  • 1 Tbsp chopped fresh parsley
  • ½ (16-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, melt butter in a large skillet over medium-high heat. Add onion and mushrooms; cook 8 minutes or until tender. Stir in rice, parsley, and salt and pepper to taste.
  3. Steam green beans according to package directions.
