Lemon-Garlic Fish
Mushroom Rice and Steamed Green BeansIngredients
- 2 (6-oz) tilapia fillets
- 1 Tbsp all-purpose flour
- 2 Tbsp butter
- 1 clove garlic, minced
- ¼ cup white wine
- ½ cup chicken broth
- ½ tsp lemon zest
- ½ Tbsp fresh lemon juice
- 1 Tbsp chopped fresh parsley
Instructions
- Season fish lightly with salt and pepper. Dredge in flour to coat.
- Melt butter in a large nonstick skillet over medium-high heat. Add fish, and cook until browned on both sides. Remove from skillet.
- Add garlic to skillet; cook 30 seconds. Add wine, and cook 1 minute. Add broth; return fish to skillet, and cook 2 to 3 minutes or until fish flakes and sauce is thickened. Stir in lemon zest, juice, and parsley.

- ½ cup long-grain white rice
- 1 Tbsp butter
- ¼ cup chopped onion
- ½ (8-oz) pkg sliced mushrooms
- 1 Tbsp chopped fresh parsley
- ½ (16-oz) pkg frozen green beans
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, melt butter in a large skillet over medium-high heat. Add onion and mushrooms; cook 8 minutes or until tender. Stir in rice, parsley, and salt and pepper to taste.
- Steam green beans according to package directions.
