Mediterranean Snapper Packets
Sweet Potato and Zucchini "Noodles"Ingredients
- 3 (6-oz) snapper fillets (or use catfish or grouper)
- ¼ tsp salt
- ¼ tsp pepper
- ½ (9-oz) pkg frozen quartered artichoke hearts, thawed
- ½ (6-oz) jar marinated quartered artichoke hearts (do not drain)
- ½ cup grape tomatoes
- 2 green onions, sliced
Instructions
- Preheat oven to 450°F. Place each fish fillet on a 15-inch piece of parchment paper, keeping fish to one side; sprinkle with salt and pepper.
- Combine artichokes, tomatoes, and green onions; spoon over fish.
- Fold parchment over fish; seal by making overlapping folds around parchment edge. Place packets on a baking sheet.
- Bake 12 minutes. Carefully cut or tear open parchment packets to serve.
Side Dish Ingredients
- ½ (16-oz) pkg sweet potato noodles
- ½ (16-oz) pkg zucchini noodles
- 1 Tbsp olive oil
- 2 Tbsp chopped fresh parsley
- ⅛ tsp salt
Side Dish Instructions
- Cook noodles in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until tender. Sprinkle with parsley and salt.
