Tuscan Pork Chops
Mashed Potatoes and Broccoli
Ingredients
- 6 boneless pork loin chops (about 2 lb)
- 2 Tbsp olive oil
- 1 onion, thinly sliced
- 3 tomatoes, chopped
- 1 Tbsp minced garlic
- ½ cup white wine (or use chicken broth)
- ½ cup sliced fresh basil
Instructions
- Season pork lightly with salt and pepper. Cook pork in hot oil in a large skillet over medium heat 4 minutes per side or until browned. Remove from skillet, and keep warm.
- Add onion to skillet; cook 3 minutes or until just tender. Stir in tomatoes, garlic, and wine; cook, stirring often, 5 to 6 minutes or until sauce is thickened.
- Return pork to skillet; cook 1 minute. Sprinkle with basil.

- 1 (16-oz) pkg frozen broccoli florets
Side Dish Instructions
- Heat potatoes according to package directions.
- Cook broccoli according to package directions; season with salt and pepper to taste.
