Crunchy Barbecue Chicken

Ingredients
- 2 lb boneless, skinless chicken breasts, halved crosswise
- 1 cup barbecue sauce
- 1 (6-oz) pkg French fried onions, crushed
- ½ cup grated Parmesan cheese
- 2 tsp dried parsley
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush chicken with barbecue sauce.
- Combine onions, cheese, parsley, and pepper in a shallow dish. Dredge chicken in onion mixture.
- Place chicken on a lightly greased wire rack on a rimmed baking sheet. Bake 20 minutes or until chicken is done.

- 4 stalks celery, thinly sliced
- 2 apples (preferably a sweet, crisp variety), chopped
- 3 Tbsp chopped fresh parsley
- 2 Tbsp olive oil
- 2 Tbsp white vinegar

- Toss together all ingredients just before serving.
