Easy Beef Goulash

Ingredients

  • ¾ lb ground beef
  • ½ cup chopped onion
  • 1½ cups water
  • 1 (15-oz) can diced tomatoes
  • 1 (8-oz) can tomato sauce
  • 1 (15-oz) can corn, drained
  • 1½ Tbsp gluten-free Worcestershire sauce
  • 1 Tbsp brown sugar
  • 1 cup gluten-free elbow macaroni

Instructions

  1. Cook beef and onion in a Dutch oven over medium heat until beef is browned and crumbly; drain and return to pot.
  2. Stir in water, diced tomatoes, tomato sauce, corn, Worcestershire, and brown sugar; bring to a boil, reduce heat, and simmer 5 minutes.
  3. Add pasta, and simmer, stirring occasionally, 10 minutes or until tender. Season with salt and pepper to taste.

Side Dish Ingredients

  • ½ (16-oz) pkg tricolor coleslaw
  • ½ (9-oz) pkg mixed salad greens
  • ½ cucumber, thinly sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup gluten-free Ranch dressing

Side Dish Instructions

  1. Toss together all ingredients just before serving.
