Easy Beef Goulash
Mixed Greens and Coleslaw Salad
Ingredients
- ¾ lb ground beef
- ½ cup chopped onion
- 1½ cups water
- 1 (15-oz) can diced tomatoes
- 1 (8-oz) can tomato sauce
- 1 (15-oz) can corn, drained
- 1½ Tbsp gluten-free Worcestershire sauce
- 1 Tbsp brown sugar
- 1 cup gluten-free elbow macaroni
Instructions
- Cook beef and onion in a Dutch oven over medium heat until beef is browned and crumbly; drain and return to pot.
- Stir in water, diced tomatoes, tomato sauce, corn, Worcestershire, and brown sugar; bring to a boil, reduce heat, and simmer 5 minutes.
- Add pasta, and simmer, stirring occasionally, 10 minutes or until tender. Season with salt and pepper to taste.
Side Dish Ingredients
- ½ (16-oz) pkg tricolor coleslaw
- ½ (9-oz) pkg mixed salad greens
- ½ cucumber, thinly sliced
- ¼ cup thinly sliced red onion
- ¼ cup gluten-free Ranch dressing
Side Dish Instructions
- Toss together all ingredients just before serving.
