Chicken Fajita Roll-Ups

Cilantro-Lime Mashed Sweet Potatoes

Ingredients

  • ¾ lb thin sliced boneless, skinless chicken breasts
  • ½ tsp garlic salt
  • 1 small red bell pepper, thinly sliced
  • 1 small yellow bell pepper, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 Tbsp salt-free Southwestern seasoning
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F; line a baking sheet with parchment paper.
  2. Sprinkle one side of each chicken breast with garlic salt.
  3. Arrange bell peppers and onion in center of each chicken breast.
  4. Roll up chicken to enclose mixture; secure chicken with wooden picks.
  5. Sprinkle outside of chicken rolls with Southwest seasoning. Cook chicken rolls in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until browned. Transfer to prepared baking sheet.
  6. Bake 15 to 20 minutes or until chicken is done.

Side Dish Ingredients

  • 1 lb sweet potatoes
  • 2 tsp olive oil
  • 2 tsp chopped fresh cilantro
  • ½ tsp lime zest
  • ½ tsp lime juice
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Peel potatoes, and cut into 1-inch chunks. Combine potatoes and water to cover in a large saucepan; bring to a boil, reduce heat, and simmer 10 minutes or until tender.
  2. Drain potatoes well, and return to pot. Add oil, cilantro, lime zest, and lime juice.
  3. Mash with a potato masher to desired consistency. Season with salt and pepper.
