Sweet-and-Spicy Pineapple-Glazed Salmon

Ingredients

  • 3 Tbsp pineapple preserves (or use orange preserves)
  • 1 Tbsp lemon juice
  • 1 Tbsp orange juice
  • 2 tsp chili powder
  • ½ tsp soy sauce
  • 1 clove garlic, crushed
  • ½ tsp Kosher salt
  • ¾ lb salmon fillets 
  • 1 green onion, chopped

Instructions

  1. Preheat broiler. Whisk together preserves, lemon juice, orange juice, chili powder, soy sauce, garlic, and salt.
  2. Place fish on a foil-lined baking sheet; brush with preserves mixture. Broil 6 to 8 minutes or until fish flakes with a fork. Serve fish sprinkled with onion.

Side Dish Ingredients

  • ½ lb sweet potatoes, cubed
  • 6 Tbsp low-sodium chicken broth
  • 2 Tbsp butter
  • 2 tsp brown sugar

Side Dish Instructions

  1. Boil potatoes in a large saucepan 20 minutes or until tender. Drain and return to pot.
  2. Stir in broth, butter, and sugar. Mash potatoes with a potato masher to desired consistency. Season with desired amounts of salt and pepper before serving.
