Sweet-and-Spicy Pineapple-Glazed Salmon
Smashed Sweet Potatoes
Ingredients
- 3 Tbsp pineapple preserves (or use orange preserves)
- 1 Tbsp lemon juice
- 1 Tbsp orange juice
- 2 tsp chili powder
- ½ tsp soy sauce
- 1 clove garlic, crushed
- ½ tsp Kosher salt
- ¾ lb salmon fillets
- 1 green onion, chopped
Instructions
- Preheat broiler. Whisk together preserves, lemon juice, orange juice, chili powder, soy sauce, garlic, and salt.
- Place fish on a foil-lined baking sheet; brush with preserves mixture. Broil 6 to 8 minutes or until fish flakes with a fork. Serve fish sprinkled with onion.
Side Dish Ingredients
- ½ lb sweet potatoes, cubed
- 6 Tbsp low-sodium chicken broth
- 2 Tbsp butter
- 2 tsp brown sugar
Side Dish Instructions
- Boil potatoes in a large saucepan 20 minutes or until tender. Drain and return to pot.
- Stir in broth, butter, and sugar. Mash potatoes with a potato masher to desired consistency. Season with desired amounts of salt and pepper before serving.
