Ingredients

  • 1 orange
  • 1 lemon
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh thyme
  • 1 lb chicken drumsticks
  • 1 Tbsp Caribbean jerk seasoning
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Grate zest and squeeze juice from orange and lemon. Combine orange and lemon zest and juices, garlic, and thyme in a large zip-top plastic bag. Add chicken; seal, turning to coat.
  2. Chill 4 hours or overnight.
  3. Preheat oven to 375°F. Remove chicken from bag; reserving marinade.
  4. Sprinkle chicken with seasoning, salt, and pepper. Place chicken on foil-lined baking sheet coated with cooking spray.
  5. Bake 35 to 40 minutes or until done, turning after 20 minutes.
  6. Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes. Drizzle over chicken.

  • 2 cups thinly sliced cabbage
  • ½ cup fresh flat-leaf parsley leaves
  • 6 Tbsp chopped pecans, toasted
  • ¼ cup thinly sliced red onion
  • 1 Honeycrisp apple, thinly sliced
  • 1½ Tbsp lemon juice
  • 3 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Combine cabbage, parsley, nuts, and onion.
  2. Toss apple with lemon juice; add to cabbage mixture. Drizzle salad with oil; sprinkle with salt and pepper. Toss.
