Baked Jerk Chicken Drumsticks
Cabbage-Apple Slaw with Pecans

Ingredients
- 1 orange
- 1 lemon
- 2 cloves garlic, minced
- 1 Tbsp chopped fresh thyme
- 1 lb chicken drumsticks
- 1 Tbsp Caribbean jerk seasoning
- ½ tsp salt
- ½ tsp pepper
Instructions
- Grate zest and squeeze juice from orange and lemon. Combine orange and lemon zest and juices, garlic, and thyme in a large zip-top plastic bag. Add chicken; seal, turning to coat.
- Chill 4 hours or overnight.
- Preheat oven to 375°F. Remove chicken from bag; reserving marinade.
- Sprinkle chicken with seasoning, salt, and pepper. Place chicken on foil-lined baking sheet coated with cooking spray.
- Bake 35 to 40 minutes or until done, turning after 20 minutes.
- Meanwhile, bring reserved marinade to a boil in a small saucepan; boil 2 minutes. Drizzle over chicken.

- 2 cups thinly sliced cabbage
- ½ cup fresh flat-leaf parsley leaves
- 6 Tbsp chopped pecans, toasted
- ¼ cup thinly sliced red onion
- 1 Honeycrisp apple, thinly sliced
- 1½ Tbsp lemon juice
- 3 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Combine cabbage, parsley, nuts, and onion.
- Toss apple with lemon juice; add to cabbage mixture. Drizzle salad with oil; sprinkle with salt and pepper. Toss.
