Ingredients
- ¾ lb ground beef
- 2 Tbsp chipotle peppers in adobo sauce, finely chopped (see Note)
- 1 tsp garlic powder
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup mayonnaise
- 1 Tbsp chopped fresh cilantro
- 1½ tsp lime juice
- 3 red cabbage leaves
- 1 small avocado, sliced
- 1 Roma tomato, sliced
Instructions
- Preheat grill or grill pan to medium-high heat.
- Combine beef, chipotle peppers, garlic powder, salt, and pepper; shape into 3 patties.
- Grill patties, covered, 6 minutes per side or until centers are no longer pink.
- Meanwhile, stir together mayonnaise, cilantro, and lime juice in a small bowl.
- Serve burgers in cabbage leaves with mayonnaise mixture, avocado, and tomato.
Side Dish Ingredients
- 1 small jicama
- 1 cup water
- 1 Tbsp olive oil
- ½ tsp smoked paprika (or use regular)
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Peel jicama; cut in half. Cut each half into ½-inch thick slices; cut slices into ¼-inch sticks.
- Combine jicama and water in a large microwave-safe bowl. Cover, and microwave at HIGH power 5 to 6 minutes or just until tender. Drain; pat dry with paper towels.
- Toss together jicama, oil, paprika, garlic powder, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until golden, turning once.
