Turkey-Avocado Club Sandwiches
Citrus Slaw
Ingredients
- 1 ripe avocado, pitted and mashed
- 1 tsp fresh lemon juice
- 8 (1-oz) slices whole-grain bread, toasted
- 1 (9-oz) pkg oven roasted turkey breast
- 8 slices center-cut bacon, cooked
- 1 tomato, sliced
- 4 leaves green leaf lettuce (optional)
Instructions
- Stir together avocado and lemon juice; spread evenly over 1 side of 4 bread slices.
- Layer evenly with turkey, bacon, tomato, lettuce leaves, if using, and remaining bread slices. Slice sandwiches in half diagonally.
Side Dish Ingredients
- 1 (10-oz) pkg coleslaw mix
- 3 green onions, sliced
- 1 large orange, peeled and coarsely chopped
- 2 Tbsp olive oil
- 1 Tbsp honey
- 1 tsp grated lemon rind
- 2 Tbsp fresh lemon juice
- ¼ tsp salt
Side Dish Instructions
- Combine slaw, green onions, and chopped orange in a bowl.
- Whisk together oil, honey, lemon rind, juice, and salt. Toss dressing with slaw.
