Turkey-Avocado Club Sandwiches

Ingredients

  • 1 ripe avocado, pitted and mashed
  • 1 tsp fresh lemon juice
  • 8 (1-oz) slices whole-grain bread, toasted
  • 1 (9-oz) pkg oven roasted turkey breast 
  • 8 slices center-cut bacon, cooked
  • 1 tomato, sliced
  • 4 leaves green leaf lettuce (optional)

Instructions

  1. Stir together avocado and lemon juice; spread evenly over 1 side of 4 bread slices.
  2. Layer evenly with turkey, bacon, tomato, lettuce leaves, if using, and remaining bread slices. Slice sandwiches in half diagonally.

Side Dish Ingredients

  • 1 (10-oz) pkg coleslaw mix
  • 3 green onions, sliced
  • 1 large orange, peeled and coarsely chopped
  • 2 Tbsp olive oil
  • 1 Tbsp honey
  • 1 tsp grated lemon rind
  • 2 Tbsp fresh lemon juice
  • ¼ tsp salt

Side Dish Instructions

  1. Combine slaw, green onions, and chopped orange in a bowl.
  2. Whisk together oil, honey, lemon rind, juice, and salt. Toss dressing with slaw.
