Mahi-Mahi with Mango Salsa

Ingredients

  • 3 (6-oz) mahi-mahi fillets (or use grouper or salmon)
  • ½ Tbsp olive oil
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • 1¼ cups cubed mango
  • ½ cup chopped red bell pepper
  • 1 Tbsp chopped fresh cilantro (or use parsley)
  • ½ Tbsp lime juice
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400°F. Brush fish with oil; sprinkle with ¼ tsp salt and pepper. Place on a baking sheet coated with cooking spray.
  2. Bake 12 to 15 minutes or until fish flakes with a fork.
  3. Combine mango, bell pepper, cilantro, lime juice, garlic, and ¼ tsp salt. Serve salsa with fish.

  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (8-oz) pkg sugar snap peas, trimmed
  • ¼ cup low-sodium chicken broth
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
  2. Add peas and broth. Cook 5 minutes or until peas are tender and broth has evaporated. Sprinkle with salt and pepper.
