Mahi-Mahi with Mango Salsa
Garlicky Sugar Snap Peas
Ingredients
- 3 (6-oz) mahi-mahi fillets (or use grouper or salmon)
- ½ Tbsp olive oil
- ½ tsp salt, divided
- ¼ tsp pepper
- 1¼ cups cubed mango
- ½ cup chopped red bell pepper
- 1 Tbsp chopped fresh cilantro (or use parsley)
- ½ Tbsp lime juice
- 1 clove garlic, minced
Instructions
- Preheat oven to 400°F. Brush fish with oil; sprinkle with ¼ tsp salt and pepper. Place on a baking sheet coated with cooking spray.
- Bake 12 to 15 minutes or until fish flakes with a fork.
- Combine mango, bell pepper, cilantro, lime juice, garlic, and ¼ tsp salt. Serve salsa with fish.

- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (8-oz) pkg sugar snap peas, trimmed
- ¼ cup low-sodium chicken broth
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Sauté garlic in hot oil in a large nonstick skillet over medium heat 1 minute or until tender.
- Add peas and broth. Cook 5 minutes or until peas are tender and broth has evaporated. Sprinkle with salt and pepper.
