Slow Cooker Roast Pork
Wild Rice-Mushroom Pilaf and Steamed BroccoliIngredients
- ¼ tsp salt
- ⅛ tsp pepper
- ½ tsp garlic powder
- ⅛ tsp ground ginger
- ⅛ tsp dried thyme
- 1 lb boneless pork loin
- 1 Tbsp olive oil
- ½ cup low sodium chicken broth
- 2 tsp fresh lemon juice
- 1 tsp low-sodium soy sauce
- 1 Tbsp arrowroot
- 1½ Tbsp water
Instructions
- Rub salt, pepper, garlic powder, ginger, and thyme all over pork.
- Brown pork all over in hot oil in a large skillet over medium-high heat. Transfer to a greased 4-quart slow cooker.
- Combine broth, lemon juice, and soy sauce. Pour over pork; cover and cook on LOW 6 hours or until pork is tender.
- Transfer pork to a platter, and keep warm; reserve one-third of pork in refrigerator for Pork Carnitas Tacos recipe.
- Pour ¾ cup cooking liquid into a saucepan. Whisk together arrowroot and water; add to saucepan, and cook until thickened. Serve over remaining pork.
Side Dish Ingredients
- ½ (8-oz) pkg sliced mushrooms
- 1 Tbsp olive oil, divided
- ½ cup quick-cooking wild rice
- 1 cup water
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ⅓ cup chopped pecans
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Sauté mushrooms in ½ Tbsp hot oil in a saucepan over medium-high heat 8 minutes or until browned and tender; add rice, water, and ⅛ tsp each salt and pepper.
- Bring to a boil; cover, reduce heat, and simmer 30 minutes or until rice is tender. Drain excess water if necessary; stir in nuts just before serving.
- Steam broccoli in a steamer basket over simmering water 5 minutes or until crisp-tender.
- Toss broccoli with ½ Tbsp oil and ⅛ tsp each salt and pepper.
