Pork Carnitas Tacos

Ingredients

  • ½ onion, sliced
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • Reserved Roast Pork, shredded (from Slow Cooker Pork recipe)
  • 3 Tbsp low-sodium chicken broth
  • 1 tsp BPA-free organic tomato paste
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 4 corn tortillas
  • 2 Tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Sauté onion and garlic in hot oil in a large skillet over medium heat 5 minutes or until tender; stir in pork, broth, tomato paste, cumin, salt, and pepper.
  2. Cook 10 minutes or until thoroughly heated.
  3. Heat tortillas according to package directions.
  4. Serve pork in warm tortillas; top with cilantro, and serve with lime.

  • ½ onion, chopped
  • 1 small organic jalapeño pepper, minced
  • 1 Tbsp olive oil
  • 1 (15-oz) can BPA-free black beans, drained and rinsed
  • 1 Tbsp fresh lime juice
  • 1 Tbsp water
  • 1 Tbsp chopped fresh cilantro
  • ⅛ tsp salt

Side Dish Instructions

  1. Sauté onion and jalapeño in hot oil in a nonstick skillet over medium heat 5 minutes or until tender; stir in beans, lime juice, 1 Tbsp water, cilantro, and salt.
