Pork Carnitas Tacos
Spicy Black Beans
Ingredients
- ½ onion, sliced
- 1 clove garlic, minced
- 1 Tbsp olive oil
- Reserved Roast Pork, shredded (from Slow Cooker Pork recipe)
- 3 Tbsp low-sodium chicken broth
- 1 tsp BPA-free organic tomato paste
- ½ tsp ground cumin
- ¼ tsp salt
- ⅛ tsp pepper
- 4 corn tortillas
- 2 Tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Sauté onion and garlic in hot oil in a large skillet over medium heat 5 minutes or until tender; stir in pork, broth, tomato paste, cumin, salt, and pepper.
- Cook 10 minutes or until thoroughly heated.
- Heat tortillas according to package directions.
- Serve pork in warm tortillas; top with cilantro, and serve with lime.

- 1 small organic jalapeño pepper, minced
- 1 Tbsp olive oil
- 1 (15-oz) can BPA-free black beans, drained and rinsed
- 1 Tbsp fresh lime juice
- 1 Tbsp water
- 1 Tbsp chopped fresh cilantro
- ⅛ tsp salt
Side Dish Instructions
- Sauté onion and jalapeño in hot oil in a nonstick skillet over medium heat 5 minutes or until tender; stir in beans, lime juice, 1 Tbsp water, cilantro, and salt.
