Veggie-Smothered Turkey Burgers

Sweet Potato Puffs and Orange-Butter Lettuce with Cilantro

Ingredients

  • ½ lb ground turkey
  • 2 tsp salt-free Montreal steak seasoning
  • 1 tsp Worcestershire sauce
  • 2 tsp canola oil
  • 1 (8-oz) pkg sliced mushrooms
  • 1 green bell pepper, cut into strips
  • ½ cup thinly sliced onion
  • 2 cloves garlic, minced
  • ⅛ tsp salt
  • ½ cup low-sodium chicken broth
  • 2 tsp cornstarch

Instructions

  1. Mix together turkey, seasoning, and Worcestershire; Shape into 2 patties.
  2. Cook patties in 1 tsp hot oil in a large nonstick skillet 4 to 5 minutes per side or until done. Transfer to a plate; keep warm.
  3. Cook mushrooms, bell pepper, onion, garlic, and salt in 1 tsp hot oil in skillet 8 to 10 minutes or until tender.
  4. Whisk together broth and cornstarch; add to skillet. Cook, stirring, 2 to 4 minutes or until sauce is thickened and vegetables are tender. Serve burgers topped with vegetable mixture.

Side Dish Ingredients

  • 1½ cups frozen sweet potato puffs
  • ½ (6-oz) pkg butter lettuce salad
  • 1 orange, peeled and sectioned
  • ¼ cup light raspberry walnut salad dressing
  • 2 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Bake potato puffs according to package directions. Meanwhile, combine lettuce, oranges, dressing, and cilantro in a large bowl; toss. Serve potato puffs and salad alongside burgers.
