Veggie-Smothered Turkey Burgers
Sweet Potato Puffs and Orange-Butter Lettuce with Cilantro
Ingredients
- ½ lb ground turkey
- 2 tsp salt-free Montreal steak seasoning
- 1 tsp Worcestershire sauce
- 2 tsp canola oil
- 1 (8-oz) pkg sliced mushrooms
- 1 green bell pepper, cut into strips
- ½ cup thinly sliced onion
- 2 cloves garlic, minced
- ⅛ tsp salt
- ½ cup low-sodium chicken broth
- 2 tsp cornstarch
Instructions
- Mix together turkey, seasoning, and Worcestershire; Shape into 2 patties.
- Cook patties in 1 tsp hot oil in a large nonstick skillet 4 to 5 minutes per side or until done. Transfer to a plate; keep warm.
- Cook mushrooms, bell pepper, onion, garlic, and salt in 1 tsp hot oil in skillet 8 to 10 minutes or until tender.
- Whisk together broth and cornstarch; add to skillet. Cook, stirring, 2 to 4 minutes or until sauce is thickened and vegetables are tender. Serve burgers topped with vegetable mixture.
Side Dish Ingredients
- 1½ cups frozen sweet potato puffs
- ½ (6-oz) pkg butter lettuce salad
- 1 orange, peeled and sectioned
- ¼ cup light raspberry walnut salad dressing
- 2 Tbsp chopped fresh cilantro
Side Dish Instructions
- Bake potato puffs according to package directions. Meanwhile, combine lettuce, oranges, dressing, and cilantro in a large bowl; toss. Serve potato puffs and salad alongside burgers.
