Waldorf Chicken Salad and Celery Sticks
Lemony Arugula SaladIngredients
- ¼ cup chopped walnuts
- 2 cups shredded rotisserie chicken
- ⅓ cup olive-oil mayonnaise
- 1 Tbsp lemon juice
- 1 small apple, diced
- 8 celery stalks, halvedcrosswise
Instructions
- Toast nuts in a dry skillet over medium heat 2 to 4 minutes or until lightly toasted.
- Mix together chicken, mayonnaise, and lemon juice until well combined; fold in apple and nuts. Serve salad with celery sticks.

- 2 Tbsp extra virgin olive oil
- ½ Tbsp honey
- 1 Tbsp lemon juice
- ½ tsp lemon zest
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby arugula
Side Dish Instructions
- Whisk together oil, honey, lemon juice, lemon zest, mustard, salt, and pepper in a large bowl. Add arugula; toss.
