Waldorf Chicken Salad and Celery Sticks

Ingredients

  • ¼ cup chopped walnuts
  • 2 cups shredded rotisserie chicken
  • ⅓ cup olive-oil mayonnaise
  • 1 Tbsp lemon juice
  • 1 small apple, diced
  • 8 celery stalks, halvedcrosswise

Instructions

  1. Toast nuts in a dry skillet over medium heat 2 to 4 minutes or until lightly toasted.
  2. Mix together chicken, mayonnaise, and lemon juice until well combined; fold in apple and nuts. Serve salad with celery sticks.

  • 2 Tbsp extra virgin olive oil
  • ½ Tbsp honey
  • 1 Tbsp lemon juice
  • ½ tsp lemon zest
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (5-oz) pkg baby arugula

Side Dish Instructions

  1. Whisk together oil, honey, lemon juice, lemon zest, mustard, salt, and pepper in a large bowl. Add arugula; toss.
