Barley with Apples, Arugula, and Walnuts
Wheat Rolls with Honey Butter
Ingredients
- 1 cup quick-cooking barley
- ¾ cup chopped walnuts
- ¼ cup extra virgin olive oil
- 2 Tbsp lemon juice
- 2 tsp Dijon mustard
- 2 tsp honey
- 1 (5-oz) pkg baby arugula
- 3 apples, sliced
- 1½ cups crumbled feta cheese
Instructions
- Cook barley according to package directions. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
- Whisk together oil, lemon juice, mustard, honey, and desired amounts salt and pepper in a large bowl. Add barley, arugula, apples, and nuts; toss. Serve sprinkled with cheese.

- 6 frozen whole-grain rolls
- ¼ cup butter, softened
- 2 Tbsp honey
Side Dish Instructions
- Heat rolls according to package directions. Meanwhile, mix together butter and honey in a small bowl. Spread butter mixture over rolls before serving.
