Barley with Apples, Arugula, and Walnuts

Ingredients

  • 1 cup quick-cooking barley
  • ¾ cup chopped walnuts
  • ¼ cup extra virgin olive oil
  • 2 Tbsp lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • 1 (5-oz) pkg baby arugula
  • 3 apples, sliced
  • 1½ cups crumbled feta cheese

Instructions

  1. Cook barley according to package directions. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until golden and fragrant.
  2. Whisk together oil, lemon juice, mustard, honey, and desired amounts salt and pepper in a large bowl. Add barley, arugula, apples, and nuts; toss. Serve sprinkled with cheese.

  • 6 frozen whole-grain rolls
  • ¼ cup butter, softened
  • 2 Tbsp honey

Side Dish Instructions

  1. Heat rolls according to package directions. Meanwhile, mix together butter and honey in a small bowl. Spread butter mixture over rolls before serving.
