Layered Mexican Salad with Salsa Dressing

Ingredients

  • 2 (10-oz) pkg chopped romaine lettuce
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can pinto beans, drained and rinsed
  • 1 (15-oz) can whole kernel corn, drained
  • 1 orange bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 (4-oz) pkg crumbed feta cheese
  • 1 cup whole-grain tortilla chips, lightly crushed
  • ¼ cup chopped fresh cilantro
  • 1 (5.3-oz) carton plain Greek yogurt
  • ¾ cup fresh salsa
  • 2 Tbsp mayonnaise
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar

Instructions

  1. Layer lettuce, beans, corn, bell pepper, tomatoes, cheese, chips, and cilantro in a large serving bowl.
  2. Process yogurt, salsa, mayonnaise, oil, and vinegar in a blender until smooth, scraping sides as needed. Serve dressing alongside salad.
