One Dish Dinner
Layered Mexican Salad with Salsa Dressing

Ingredients
- 2 (10-oz) pkg chopped romaine lettuce
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can pinto beans, drained and rinsed
- 1 (15-oz) can whole kernel corn, drained
- 1 orange bell pepper, chopped
- 2 tomatoes, chopped
- 1 (4-oz) pkg crumbed feta cheese
- 1 cup whole-grain tortilla chips, lightly crushed
- ¼ cup chopped fresh cilantro
- 1 (5.3-oz) carton plain Greek yogurt
- ¾ cup fresh salsa
- 2 Tbsp mayonnaise
- 1 Tbsp olive oil
- 1 Tbsp apple cider vinegar
Instructions
- Layer lettuce, beans, corn, bell pepper, tomatoes, cheese, chips, and cilantro in a large serving bowl.
- Process yogurt, salsa, mayonnaise, oil, and vinegar in a blender until smooth, scraping sides as needed. Serve dressing alongside salad.
