Favorite Taco Soup

Ingredients

  • 1 lb ground beef
  • 2 cloves garlic, minced
  • 1 small red bell pepper, chopped
  • 1 (1-oz) envelope taco seasoning mix
  • ¾ cup low-sodium beef broth (or use water)
  • 1 cup pinto beans, drained and rinsed
  • ¾ cup frozen whole kernel corn
  • 1 (14.5-oz) can crushed tomatoes
  • 1 (10-oz) can diced tomatoes with green chiles
  • 1 cup shredded Cheddar cheese
  • 1 (8-oz) carton sour cream
  • 1 (9-oz) pkg corn chips

Instructions

  1. Cook beef, garlic, bell pepper, and taco mix in a large skillet over medium-high heat 10 minutes until beef is browned and crumbly; drain and transfer to a 4-or 5-quart slow cooker.
  2. Stir in broth, beans, corn, and 2 cans tomatoes. Cover and cook on LOW 4 to 6 hours or until ready to serve.
  3. Top each serving with desired amount of cheese, sour cream, and corn chips. Freeze any remaining soup for another meal.
