Teriyaki-Glazed Salmon
Glazed Sugar Snap Peas and Carrots

Ingredients
- 6 (6-oz) salmon fillets
- 1 Tbsp olive oil
- 3 Tbsp low-sodium soy sauce
- 3 Tbsp white wine
- 1 Tbsp maple syrup
- 1½ tsp cornstarch
- ¾ tsp Sriracha
- ½ tsp ground ginger
- 3 cloves garlic, minced
Instructions
- Preheat broiler. Place salmon on a foil-lined baking sheet; brush with oil.
- Broil 8 to 10 minutes or to desired doneness; remove from oven.
- Meanwhile, whisk together soy sauce, wine, maple syrup, cornstarch, Sriracha, ginger, and garlic in a small saucepan.
- Cook 3 to 4 minutes until slightly thickened. Brush over salmon.
Side Dish Ingredients
- ½ lb carrots, cut diagonally into thin slices
- 1 (8-oz) pkg sugar snap peas, cut diagonally into 1-inch pieces
- 1 red bell pepper, halved and thinly sliced
- ⅓ cup orange juice
- 1 Tbsp brown sugar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Steam carrots, snap peas, and bell pepper in a steamer basket over boiling water 5 minutes or until crisp-tender.
- Cook vegetables, orange juice, sugar, salt, and pepper in a large skillet over medium-high heat until liquid is thick and syrupy, stirring constantly.
