Ingredients

  • 6 limes
  • 2 chipotle chile peppers in adobo sauce (from a 7-oz can), chopped 
  • 1 Tbsp adobo sauce (from can)
  • ½ cup fresh chopped cilantro, divided
  • ⅓ cup olive oil
  • 1½ tsp salt
  • 3 cloves garlic, minced
  • 1½ lb flank steak, cut into ¼-inch slices
  • 12 soft taco-size low-carb, low-fat flour tortillas
  • 6 Tbsp sour cream
  • 3 Roma tomatoes, chopped
  • 1 cup chopped red onion
  • 6 Tbsp crumbled cotija cheese

Instructions

  1. Squeeze juice from limes. Whisk together lime juice, chipotle peppers, adobo sauce, ¼ cup cilantro, oil, salt, and garlic. Add steak; seal and marinate in refrigerator 8 hours or overnight.
  2. Remove steak from marinade; discard marinade.
  3. Cook steak in a large skillet over medium-high heat 5 to 7 minutes or to desired doneness .
  4. Top tortillas with steak, sour cream, tomatoes, onion, cheese, and ¼ cup cilantro.

  • 2 zucchini, cut into half moons
  • ½ cup sliced red onion
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • ½ cup chopped fresh cilantro
  • 6 Tbsp crumbled cotija cheese
  • 1½ Tbsp lime juice

Side Dish Instructions

  1. Sauté squash, zucchini, onion, and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until browned.
  2. Remove from skillet; toss with cilantro, cheese, and lime juice.
