Ingredients
- 6 limes
- 2 chipotle chile peppers in adobo sauce (from a 7-oz can), chopped
- 1 Tbsp adobo sauce (from can)
- ½ cup fresh chopped cilantro, divided
- ⅓ cup olive oil
- 1½ tsp salt
- 3 cloves garlic, minced
- 1½ lb flank steak, cut into ¼-inch slices
- 12 soft taco-size low-carb, low-fat flour tortillas
- 6 Tbsp sour cream
- 3 Roma tomatoes, chopped
- 1 cup chopped red onion
- 6 Tbsp crumbled cotija cheese
Instructions
- Squeeze juice from limes. Whisk together lime juice, chipotle peppers, adobo sauce, ¼ cup cilantro, oil, salt, and garlic. Add steak; seal and marinate in refrigerator 8 hours or overnight.
- Remove steak from marinade; discard marinade.
- Cook steak in a large skillet over medium-high heat 5 to 7 minutes or to desired doneness .
- Top tortillas with steak, sour cream, tomatoes, onion, cheese, and ¼ cup cilantro.

- 3 cloves garlic, minced
- 2 Tbsp olive oil
- ½ cup chopped fresh cilantro
- 6 Tbsp crumbled cotija cheese
- 1½ Tbsp lime juice
Side Dish Instructions
- Sauté squash, zucchini, onion, and garlic in hot oil in a large skillet over medium-high heat 5 to 7 minutes or until browned.
- Remove from skillet; toss with cilantro, cheese, and lime juice.
