White Chicken Chili

Ingredients
- 2 Tbsp butter
- ½ cup finely chopped onion
- 2 Tbsp minced garlic
- 3 to 4 cups chopped rotisserie chicken
- 1 tsp dried oregano
- 1 tsp salt
- 1 (4.5-oz) can chopped green chiles, undrained
- 2½ cups chicken broth
- 2 (15-oz) cans great Northern beans, drained
- 1 (8-oz) pkg shredded Monterey Jack cheese, divided (or use mozzarella)
- ½ cup heavy cream
- 1 (8-oz) carton sour cream
- 1 cup salsa
- Tortilla chips
Instructions
- Melt butter in a Dutch oven over medium heat; add onion and garlic. Sauté until tender. Add chicken, oregano, and salt. Sauté 2 to 3 minutes.
- Add chiles, broth, and beans. Cover and simmer 10 to 15 minutes. Stir in 1 cup cheese and heavy cream; cook just until thoroughly heated. Garnish with sour cream, salsa, 1 cup cheese, and desired amount of chips.
