Salmon with Horseradish Sauce

Ingredients

  • ½ lb salmon fillets
  • ½ tsp dried basil
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ⅓ cup sour cream
  • 2 tsp olive-oil mayonnaise
  • 2 tsp prepared horseradish

Instructions

  1. Sprinkle fish with basil, garlic powder, salt, and pepper. Cook fish in hot oil in a nonstick skillet over medium heat 5 minutes per side or until fish flakes with a fork.
  2. Combine sour cream, mayonnaise, and horseradish; serve fish with sauce.

Side Dish Ingredients

  • 1 (10-oz) pkg baby spinach
  • 2 tsp olive oil
  • ½ lemon
  • 1 (3-oz) pouch boil-in-bag quinoa 

Side Dish Instructions

  1. Cook spinach in hot oil in a large nonstick skillet over medium heat, stirring until spinach wilts.
  2. Grate zest from lemon to equal ½ tsp; squeeze juice to equal 1 Tbsp. Stir lemon zest and juice into spinach; season with salt and pepper to taste.
  3. Meanwhile, cook quinoa according to package directions.
