Salmon with Horseradish Sauce
Lemony Spinach and Quinoa
Ingredients
- ½ lb salmon fillets
- ½ tsp dried basil
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ⅓ cup sour cream
- 2 tsp olive-oil mayonnaise
- 2 tsp prepared horseradish
Instructions
- Sprinkle fish with basil, garlic powder, salt, and pepper. Cook fish in hot oil in a nonstick skillet over medium heat 5 minutes per side or until fish flakes with a fork.
- Combine sour cream, mayonnaise, and horseradish; serve fish with sauce.

- 1 (10-oz) pkg baby spinach
- 2 tsp olive oil
- ½ lemon
- 1 (3-oz) pouch boil-in-bag quinoa
Side Dish Instructions
- Cook spinach in hot oil in a large nonstick skillet over medium heat, stirring until spinach wilts.
- Grate zest from lemon to equal ½ tsp; squeeze juice to equal 1 Tbsp. Stir lemon zest and juice into spinach; season with salt and pepper to taste.
- Meanwhile, cook quinoa according to package directions.
