Peanut-Crusted Chicken Fingers
Granola-Almond Butter Apple Wheels
Ingredients
- 1 cup milk
- ½ cup creamy peanut butter
- 2 large eggs
- 2 lb chicken tenderloins
- 1 cup all-purpose flour
- 1 cup finely chopped salted peanuts
- ½ cup vegetable oil
- Honey mustard
Instructions
- Whisk together milk, peanut butter, and eggs in a large bowl. Add chicken, and let stand 30 minutes.
- Meanwhile, preheat oven to 400°F. Whisk together flour and nuts in a shallow bowl. Dip chicken in flour mixture, pressing gently to adhere.
- Cook chicken in hot oil, in batches, in a large skillet over medium heat 2 to 3 minutes per side or until browned. Transfer chicken to a lightly greased wire rack set over a rimmed baking sheet.
- Bake 10 minutes or until chicken is done. Serve with honey mustard or ketchup.
Side Dish Ingredients
- 2 large apples
- ¾ cup almond butter
- 1 cup granola (any variety)
Side Dish Instructions
- Core apples. Place each apple on its side, and cut crosswise into about ¼-inch thick rings. Arrange apple rings on a cutting board.
- Spread almond butter on each apple ring. Sprinkle with granola, pressing gently to adhere.
