Peanut-Crusted Chicken Fingers

Ingredients

  • 1 cup milk
  • ½ cup creamy peanut butter
  • 2 large eggs
  • 2 lb chicken tenderloins
  • 1 cup all-purpose flour
  • 1 cup finely chopped salted peanuts
  • ½ cup vegetable oil
  • Honey mustard

Instructions

  1. Whisk together milk, peanut butter, and eggs in a large bowl. Add chicken, and let stand 30 minutes.
  2. Meanwhile, preheat oven to 400°F. Whisk together flour and nuts in a shallow bowl. Dip chicken in flour mixture, pressing gently to adhere.
  3. Cook chicken in hot oil, in batches, in a large skillet over medium heat 2 to 3 minutes per side or until browned. Transfer chicken to a lightly greased wire rack set over a rimmed baking sheet.
  4. Bake 10 minutes or until chicken is done. Serve with honey mustard or ketchup.

Side Dish Ingredients

  • 2 large apples
  • ¾ cup almond butter
  • 1 cup granola (any variety)

Side Dish Instructions

  1. Core apples. Place each apple on its side, and cut crosswise into about ¼-inch thick rings. Arrange apple rings on a cutting board.
  2. Spread almond butter on each apple ring. Sprinkle with granola, pressing gently to adhere.
