Roasted Pork Tenderloin with Apples

Ingredients

  • ¼ tsp dried sage
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ lb pork tenderloin
  • 1 tsp canola oil
  • 1 red apple, cut into 1-inch chunks
  • ½ cup chopped onion
  • 2 Tbsp chopped walnuts
  • 2 tsp light butter with canola oil
  • ½ Tbsp honey

Instructions

  1. Preheat oven 425°F. Mix together sage, salt and pepper; sprinkle over pork. Sear pork in hot oil in a large nonstick skillet over medium-high heat, turning occasionally, until browned on all sides.
  2. Transfer pork to a foil-lined large rimmed baking sheet. Arrange apple and onion around pork; coat with cooking spray.
  3. Bake 10 to 15 minutes or meat thermometer inserted into center reads 145°F. Transfer pork to a cutting board. Stir nuts into apple mixture. Bake 3 minutes or until nuts are toasted.
  4. Toss together apple mixture, butter, and honey. Slice pork; serve topped with apple mixture.

Side Dish Ingredients

  • ¾ cup quick-cooking wild rice
  • ½ tsp grated ginger
  • ⅛ tsp salt
  • 1 cup frozen green peas
  • 2 tsp light butter with canola oil

Side Dish Instructions

  1. Cook rice according to package directions; toss with ginger and salt. Cook peas according to package directions; stir in butter. Serve rice and peas alongside pork.
