Brown Sugar Ham Bites

Ingredients

  • 2 (8-oz) fully cooked ham steaks
  • 8 Tbsp butter, cut into pieces
  • ½ cup packed brown sugar

Instructions

  1. Cook 1 ham steak in a large nonstick skillet over medium heat 3 to 4 minutes per side; remove from skillet.
  2. Add 4 Tbsp butter to skillet; once melted, stir in ¼ cup brown sugar.
  3. Return ham steak to skillet; cook over medium-low heat about 10 minutes, turning steak often.
  4. Transfer to a platter; repeat with remaining ham steak, 4 Tbsp butter and ¼ cup brown sugar. Cut ham into bite-size pieces before serving.

Side Dish Ingredients

  • 3 extra large sweet potatoes
  • ½ cup butter (1 stick), cut into pieces
  • ¾ cup granulated sugar
  • ¼ cup milk or cream
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1½ cups cornflakes cereal (or use Special K® cereal)
  • ½ cup chopped pecans
  • ¼ cup packed brown sugar
  • ¼ cup butter, cut into small pieces

Side Dish Instructions

  1. Preheat oven to 400°F. Prick potatoes, and bake 1 hour or until very tender. Cool to the touch, and scoop pulp into a food processor. Add ½ cup butter, granulated sugar, and milk; process until smooth, about 2 minutes.
  2. Add eggs and vanilla; process until smooth. Spoon potatoes into a greased 11-x 7-inch baking dish.
  3. Reduce oven temperature to 375°F. Bake, covered, 15 minutes.
  4. Meanwhile, toss together cereal, nuts, brown sugar, and ¼ cup butter; sprinkle over potatoes. Bake, uncovered, 15 to 20 minutes longer or until golden.
