Slow Cooker Coq au Vin Meatballs
Browned Butter Green Beans
Ingredients
- 2 cups red wine
- 1½ lb ground chicken (or use ground turkey)
- 2 large eggs, lightly beaten
- ¼ cup panko breadcrumbs
- ¼ tsp salt
- ½ tsp pepper, divided
- 6 slices center cut bacon
- 2 cups low-sodium chicken broth
- 2 Tbsp tomato paste
- 2 (8-oz) pkg sliced baby portobello mushrooms
- 4 carrots, sliced
- 4 shallots, quartered
- 8 sprigs fresh thyme, divided
- 2 bay leaves
- ⅓ cup water
- 1 Tbsp cornstarch
Instructions
- Cook wine in a medium saucepan over medium-high heat 15 to 20 minutes or until reduced by half.
- Meanwhile, mix together chicken, eggs, breadcrumbs, salt, and ¼ tsp pepper in a large bowl; shape into 18 balls.
- Cook bacon in a large skillet over medium-high heat 5 to 7 minutes or until crisp; drain, reserving drippings in skillet. Crumble bacon. Brown meatballs, in batches, in hot drippings 5 minutes.
- Stir together wine, bacon, broth, tomato paste, mushrooms, carrots, shallots, 5 sprigs thyme, bay leaves, and ¼ tsp pepper in a 5- to 7-quart slow cooker. Add meatballs.
- Cook on LOW 7 hours. Whisk together water and cornstarch in a small bowl; add to cooker. Cook on HIGH 20 to 30 minutes or until thickened.
- Meanwhile, chop 3 sprigs thyme; sprinkle over coq au vin before serving.

- ¼ tsp pepper
Side Dish Instructions
- Cook beans according to package directions.
- Melt butter in a small saucepan over medium heat. Cook 1 to 2 minutes or until just beginning to foam; toss with beans. Sprinkle with salt and pepper.
