Butter Chicken Meatballs

Ingredients
- 1 large egg yolk
- 1 clove garlic, minced
- 2 tsp smoked paprika (or use regular)
- ⅛ tsp salt
- ¾ lb ground chicken
- ½ cup panko breadcrumbs
- ½ (15-oz) jar butter chicken simmer sauce
- 2 Tbsp chopped fresh cilantro
Instructions
- Preheat oven to 425°F. Whisk together egg yolk, garlic, paprika, and salt in a large bowl. Add chicken and panko; gently mix together using your hands.
- Roll chicken mixture into 1½-inch meatballs. Place on a greased rimmed baking sheet.
- Bake 10 minutes or until meatballs are no longer pink in center, shaking pan after 5 minutes.
- Meanwhile, heat simmer sauce until warm. Serve over meatballs. Sprinkle with cilantro.
