Chicken Fajitas

Ingredients
- ½ lb boneless, skinless chicken breasts, thinly sliced
- 1 tsp natural salt-free fajita seasoning
- Pinch of salt
- 2 tsp olive oil, divided
- ⅓ cup sliced onion
- 1 organic bell pepper (any color), sliced
- 1 organic tomato, cut into wedges
- 2 Tbsp chopped fresh cilantro
- 4 fajita-size whole wheat flour tortillas, heated
- 1 lime, cut into wedges
Instructions
- Sprinkle chicken with fajita seasoning and salt.
- Heat 1 tsp oil in a cast-iron skillet over medium-high heat. Add chicken, and cook 6 to 8 minutes or until browned and done; remove chicken from skillet.
- Heat 1 tsp oil in skillet. Add onion, bell pepper, and tomato to skillet; sauté 5 minutes or until tender.
- Return chicken to skillet; stir in cilantro.
- Divide chicken mixture among tortillas; serve with lime wedges.
Side Dish Ingredients
- 1 clove garlic, minced
- 1 avocado, finely chopped
- 1 organic tomato, diced
- 2 tsp fresh lime juice
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Combine all ingredients in a bowl; mash with a fork to desired consistency. Serve with fajitas.
