Lemon-Dill Rice Pilaf

  • 2 Tbsp butter
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 2 cups long-grain white rice
  • 1 (32-oz) carton chicken broth
  • 3 Tbsp minced fresh dill
  • 2 tsp lemon zest
  • ½ cup sliced almonds, toasted


  1. Melt butter in a large saucepan over medium-high heat. Add onion and garlic; cook, stirring often, until onion is tender. Add rice, and cook, stirring frequently, 2 minutes.
  2. Add broth; bring to a boil, reduce heat, and simmer 20 minutes or until rice is tender. Fluff with a fork, and stir in dill and lemon zest. Season with salt and pepper to taste, and stir in toasted almonds.
