Chicken Sausage with Roasted Potatoes
Balsamic Sliced Tomatoes
Ingredients
- 18 oz chicken and apple sausage links, sliced
- 2 lb red potatoes, cut into ½-inch wedges
- 3 green bell peppers, sliced
- 2 onions, cut into wedges
- 3 Tbsp canola oil
- 1½ tsp dried fennel seeds
- 1 tsp smoked paprika (or use regular)
- ¾ tsp garlic powder
- ½ tsp salt
Instructions
- Preheat oven to 400°F. Toss together sausage, potatoes, bell pepper, onion, and oil over 2 foil-lined large rimmed baking sheets; spread in a single layer. Sprinkle with fennel seeds, paprika, garlic powder, and salt.
- Bake 30 minutes or until potatoes are tender, rotating pans and stirring every 10 minutes. Let stand 10 minutes before serving.

- 4 tomatoes, sliced
- 2 Tbsp balsamic glaze
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Arrange tomato slices on a platter; drizzle with glaze. Serve sprinkled with salt and pepper.
