Oven-Roasted Garlicky Salmon and Brussels Sprouts
Ingredients
- 8 cloves garlic
- 7 Tbsp olive oil
- 2 Tbsp finely chopped fresh flat-leaf parsley, divided
- 1 tsp salt, divided
- ¼ tsp pepper
- 1 lb Brussels sprouts
- 4 (5-oz) salmon fillets, thawed and patted dry
- ½ cup low-sodium chicken broth
Instructions
- Preheat oven to 450°F. Mince 3 cloves garlic; combine with oil, 1 Tbsp parsley, ½ tsp salt, and pepper in a small bowl.
- Cut 5 cloves garlic in half; toss with Brussels sprouts and 4 Tbsp oil mixture in a large roasting pan.
- Bake 15 minutes. Remove from oven; stir and arrange salmon on top of Brussels sprouts.
- Combine broth and remaining oil mixture; drizzle over salmon. Sprinkle with 1 Tbsp parsley and ½ tsp salt.
- Bake 10 minutes or until fish flakes with a fork.
