Southwest Burgers with Guacamole

Ingredients

  • 1 Tbsp Southwest seasoning (or use fajita seasoning)
  • 1¼ tsp garlic salt, divided
  • ¼ tsp pepper
  • 4 (5.4-oz) ground beef patties
  • 1 avocado
  • 1 Tbsp lime juice
  • 4 large iceberg lettuce leaves

Instructions

  1. Preheat grill to medium-high heat. Combine Southwest seasoning, 1 tsp garlic salt, and pepper in a small bowl; sprinkle over both sides of patties.
  2. Grill, covered, 6 minutes per side or until no longer pink.
  3. Mash avocado with a fork until chunky. Add lime juice and ¼ tsp garlic salt. Mix well.
  4. Serve burgers on lettuce leaves with guacamole.

  • 2 zucchini, cut into wedges
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Toss together all ingredients on a rimmed baking sheet.
  2. Bake 20 minutes or until tender, stirring once.
