Black and Blue Meat Loaf Cups
Warm Bacon-Green Bean SaladIngredients
- 1 lb ground beef
- ⅓ cup crumbled blue cheese
- ¼ cup almond flour
- 2 cups chopped spinach (see Note)
- 1 large egg
- 2 Tbsp Worcestershire sauce
- ½ tsp Montreal steak seasoning
Instructions
- Preheat oven to 375°F. Spray 8 muffin cups with cooking spray.
- Combine beef, cheese, almond flour, spinach, egg, Worcestershire sauce, and steak seasoning in a large bowl.
- Divide meat among muffin cups. Bake 30 minutes or until no longer pink.
Side Dish Ingredients
- 4 slices bacon
- ¾ lb green beans, cut into 1-inch pieces
- ½ red onion, thinly sliced
- 1 Tbsp red wine vinegar
- ¼ tsp kosher salt
Side Dish Instructions
- Cook bacon until crisp; drain, reserving drippings in skillet. Crumble bacon.
- Steam green beans in a steamer basket 4 minutes or until crisp-tender; drain and cool.
- Combine beans and onion in a bowl. Whisk vinegar into reserved drippings. Pour over green beans. Toss; sprinkle with salt.
