Ingredients

  • 1 lb ground beef
  • ⅓ cup crumbled blue cheese
  • ¼ cup almond flour
  • 2 cups chopped spinach (see Note)
  • 1 large egg
  • 2 Tbsp Worcestershire sauce
  • ½ tsp Montreal steak seasoning

Instructions

  1. Preheat oven to 375°F. Spray 8 muffin cups with cooking spray.
  2. Combine beef, cheese, almond flour, spinach, egg, Worcestershire sauce, and steak seasoning in a large bowl.
  3. Divide meat among muffin cups. Bake 30 minutes or until no longer pink.

Side Dish Ingredients

  • 4 slices bacon
  • ¾ lb green beans, cut into 1-inch pieces
  • ½ red onion, thinly sliced
  • 1 Tbsp red wine vinegar
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Cook bacon until crisp; drain, reserving drippings in skillet. Crumble bacon.
  2. Steam green beans in a steamer basket 4 minutes or until crisp-tender; drain and cool.
  3. Combine beans and onion in a bowl. Whisk vinegar into reserved drippings. Pour over green beans. Toss; sprinkle with salt.
