Asian Lime Steak
Sesame Cauli-Rice with Spinach
Ingredients
- 1 lb skirt steak (or use flank steak)
- 1 Tbsp almond butter
- 1 Tbsp low-sodium soy sauce
- 1½ Tbsp sesame oil
- ½ tsp lime zest
- 1½ tsp lime juice
- 2 cloves garlic, minced
- ¼ tsp kosher salt
- ¼ tsp pepper
Instructions
- Combine steak, almond butter, soy sauce, oil, lime zest, lime juice, and garlic in a large zip-top plastic bag. Seal and turn to coat. Chill 4 hours or up to overnight.
- Preheat grill to medium-high heat. Remove steak from bag, and sprinkle with salt and pepper.
- Grill 3 to 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
Side Dish Ingredients
- 1½ Tbsp sesame oil
- 1 (10-oz) pkg frozen riced cauliflower
- ½ (5-oz) pkg baby spinach
- 1 Tbsp low-sodium soy sauce
- 3 Tbsp dry-roasted cashews, coarsely chopped
Side Dish Instructions
- Heat oil in a large nonstick skillet over medium heat. Add cauliflower, and cook according to package directions.
- Stir in spinach and soy sauce. Cook 2 minutes or until spinach is wilted. Sprinkle with nuts.
