Asian Lime Steak

Sesame Cauli-Rice with Spinach

Ingredients

  • 1 lb skirt steak (or use flank steak)
  • 1 Tbsp almond butter
  • 1 Tbsp low-sodium soy sauce
  • 1½ Tbsp sesame oil
  • ½ tsp lime zest
  • 1½ tsp lime juice
  • 2 cloves garlic, minced
  • ¼ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. Combine steak, almond butter, soy sauce, oil, lime zest, lime juice, and garlic in a large zip-top plastic bag. Seal and turn to coat. Chill 4 hours or up to overnight.
  2. Preheat grill to medium-high heat. Remove steak from bag, and sprinkle with salt and pepper.
  3. Grill 3 to 5 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.

Side Dish Ingredients

  • 1½ Tbsp sesame oil
  • 1 (10-oz) pkg frozen riced cauliflower
  • ½ (5-oz) pkg baby spinach
  • 1 Tbsp low-sodium soy sauce
  • 3 Tbsp dry-roasted cashews, coarsely chopped

Side Dish Instructions

  1. Heat oil in a large nonstick skillet over medium heat. Add cauliflower, and cook according to package directions.
  2. Stir in spinach and soy sauce. Cook 2 minutes or until spinach is wilted. Sprinkle with nuts.
