Garlic-Pesto Shrimp Pasta

Ingredients

  • 12 oz bow-tie pasta
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 1½ lb peeled and deveined, large raw shrimp
  • ¾ cup low-sodium chicken broth
  • ¾ cup pesto
  • 3 Tbsp freshly grated Parmesan cheese
  • 3 Tbsp chopped fresh parsley

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook onion in hot oil in a large skillet over medium-high heat 3 to 4 minutes. Add garlic; cook 2 minutes, stirring often.
  3. Add shrimp, and cook 1 to 2 minutes. Add broth and pesto; simmer 2 to 3 minutes or until shrimp turn pink. Add pasta, and toss. Sprinkle with cheese and parsley.

  • 6 (1-oz) slices frozen garlic bread

  1. Bake bread according to package directions.
