Oven-Fried Corn Flakes Chicken
Mashed Potatoes and Carrots
Ingredients
- 1 large egg
- 2 Tbsp milk
- 2 cups crushed cornflakes cereal
- 2 tsp dried basil
- ½ tsp salt
- ¼ tsp pepper
- 1½ lb boneless, skinless chicken breasts, cut into 2-inch strips
Instructions
- Preheat oven to 375°F. Whisk together egg and milk in a shallow bowl.
- Stir together crushed cornflakes, basil, salt, and pepper in a separate shallow bowl.
- Dip chicken in egg mixture, and then in cereal, pressing gently to coat.
- Place chicken on a lightly greased rimmed baking sheet. Bake 15 to 20 minutes or until done.
- Pack leftover chicken in lunch boxes.

- 1 (24-oz) pkg refrigerated mashed potatoes
- 1 cup baby carrots
Side Dish Instructions
- Cook potatoes according to package directions.
- Serve potatoes and carrots alongside chicken.
