Oven-Fried Corn Flakes Chicken

Ingredients

  • 1 large egg
  • 2 Tbsp milk
  • 2 cups crushed cornflakes cereal
  • 2 tsp dried basil
  • ½ tsp salt
  • ¼ tsp pepper
  • 1½ lb boneless, skinless chicken breasts, cut into 2-inch strips

Instructions

  1. Preheat oven to 375°F. Whisk together egg and milk in a shallow bowl.
  2. Stir together crushed cornflakes, basil, salt, and pepper in a separate shallow bowl.
  3. Dip chicken in egg mixture, and then in cereal, pressing gently to coat.
  4. Place chicken on a lightly greased rimmed baking sheet. Bake 15 to 20 minutes or until done.
  5. Pack leftover chicken in lunch boxes.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 cup baby carrots

Side Dish Instructions

  1. Cook potatoes according to package directions.
  2. Serve potatoes and carrots alongside chicken.
