Ingredients

  • 12 slices center cut bacon
  • ¼ cup butter, softened and divided
  • 12 slices Italian bread
  • 2 pears, sliced
  • 1½ cups shredded sharp Cheddar cheese
  • 6 slices Gouda cheese
  • 3 Tbsp chopped fresh rosemary (or use fresh thyme)

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
  2. Spread 3 Tbsp butter on one side of bread slices. Divide bacon among 6 bread slices, buttered side down. Top with pear slices, cheese, rosemary, and bread slices, buttered side up.
  3. Melt 1 Tbsp butter in a large skillet over medium-high heat. Cook sandwiches, in batches, 3 to 4 minutes per side or until golden and cheese is melted.

  • 3 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • 1 Tbsp honey
  • 1 (10-oz) pkg spinach
  • 1 small red onion, thinly sliced
  • 6 Tbsp roasted, salted pepitas (pumpkin seeds)

Side Dish Instructions

  1. Whisk together oil, vinegar, and honey in a large bowl; Add spinach, onion, and pepitas; toss.
