Bacon-Pear Grilled Cheese Sandwiches

Ingredients
- 12 slices center cut bacon
- ¼ cup butter, softened and divided
- 12 slices Italian bread
- 2 pears, sliced
- 1½ cups shredded sharp Cheddar cheese
- 6 slices Gouda cheese
- 3 Tbsp chopped fresh rosemary (or use fresh thyme)
Instructions
- Cook bacon in a large skillet over medium-high heat 6 to 8 minutes or until crisp.
- Spread 3 Tbsp butter on one side of bread slices. Divide bacon among 6 bread slices, buttered side down. Top with pear slices, cheese, rosemary, and bread slices, buttered side up.
- Melt 1 Tbsp butter in a large skillet over medium-high heat. Cook sandwiches, in batches, 3 to 4 minutes per side or until golden and cheese is melted.

- 3 Tbsp olive oil
- 2 Tbsp white wine vinegar
- 1 Tbsp honey
- 1 (10-oz) pkg spinach
- 1 small red onion, thinly sliced
- 6 Tbsp roasted, salted pepitas (pumpkin seeds)
Side Dish Instructions
- Whisk together oil, vinegar, and honey in a large bowl; Add spinach, onion, and pepitas; toss.
