Beet and Carrot Salad
Whole Wheat Rolls and Strawberry Smoothies
Ingredients
- ½ cup chopped walnuts
- 1 bunch beets, trimmed, peeled and grated
- 2 carrots, grated
- 1 zucchini, grated
- 1 (15-oz) can BPA-free kidney beans, drained and rinsed
- ½ cup rice vinegar
- 2 Tbsp sesame oil
- 1 Tbsp honey
- 1 (½-inch) piece ginger, peeled and grated
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Toast nuts in a dry skillet over medium heat until fragrant. Toss beets, carrots, and zucchini in a large bowl; add beans and nuts.
- Whisk together vinegar, oil, honey, ginger, salt, and pepper in a bowl. Pour dressing over salad; toss.
Side Dish Ingredients
- 6 dinner rolls (preferably whole wheat)
- 4½ cups frozen organic strawberries
- 1½ cups plain Greek yogurt
- 1¼ cups orange juice
- 2 Tbsp honey
Side Dish Instructions
- Heat rolls according to package directions.
- Meanwhile, in 2 batches, process strawberries, yogurt, orange juice, and honey in a blender until smooth. Pour in glasses.
