Beet and Carrot Salad

Ingredients

  • ½ cup chopped walnuts
  • 1 bunch beets, trimmed, peeled and grated
  • 2 carrots, grated
  • 1 zucchini, grated
  • 1 (15-oz) can BPA-free kidney beans, drained and rinsed
  • ½ cup rice vinegar
  • 2 Tbsp sesame oil
  • 1 Tbsp honey
  • 1 (½-inch) piece ginger, peeled and grated
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant. Toss beets, carrots, and zucchini in a large bowl; add beans and nuts.
  2. Whisk together vinegar, oil, honey, ginger, salt, and pepper in a bowl. Pour dressing over salad; toss.

Side Dish Ingredients

  • 6 dinner rolls (preferably whole wheat)
  • 4½ cups frozen organic strawberries
  • 1½ cups plain Greek yogurt
  • 1¼ cups orange juice
  • 2 Tbsp honey

Side Dish Instructions

  1. Heat rolls according to package directions.
  2. Meanwhile, in 2 batches, process strawberries, yogurt, orange juice, and honey in a blender until smooth. Pour in glasses.
