Italian Sausage Orecchiette Pasta

Ingredients
- 1 (12-oz) pkg orecchiette pasta
- 1 lb Italian chicken sausage, casings removed
- 3 cloves garlic, minced
- ½ tsp crushed red pepper
- 2 Tbsp olive oil
- 2 cups baby spinach
- 1 cup low-sodium chicken broth
- ¼ cup freshly grated Parmesan cheese (or use shaved)
Instructions
- Cook pasta according to package directions; drain.
- Meanwhile, cook sausage, garlic, and red pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly.
- Add spinach and broth, stirring until spinach wilts.
- Stir in pasta. Gradually add cheese, stirring until creamy, about 5 to 6 minutes.
Side Dish Ingredients
- 2 (9-oz) pkg chopped romaine lettuce
- ½ cup refrigerated yogurt Caesar dressing
- ½ cup freshly grated Parmesan cheese
- ½ cup Caesar croutons
Side Dish Instructions
- Toss together lettuce and dressing in a bowl. Sprinkle with cheese and croutons.
