Roast Beef and Blue Cheese Sandwiches
Sweet Potato SaladIngredients
- 2 red onions, halved and sliced
- 2 Tbsp olive oil
- 1 (13-oz) French baguette (preferably whole wheat), halved
- 2 (7-oz) pkg nitrate-free roast beef
- 1 (7-oz) jar organic roasted red peppers, drained and sliced
- 4 oz crumbled blue cheese
- 3 cups organic baby spinach
Instructions
- Sauté onions in hot oil in a large skillet over medium-high heat 8 minutes or until tender.
- Preheat oven broiler; toast baguette until lightly browned.
- Assemble baguette sandwich with roast beef, onions, red peppers, cheese, and spinach; cut into 6 servings.
Side Dish Ingredients
- 2 lb sweet potatoes, peeled and cut into 1-inch pieces
- ½ cup olive-oil mayonnaise
- ¼ cup chopped fresh parsley
- 2 Tbsp yellow mustard
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Cook 18 minutes or until tender. Drain and transfer to a large bowl.
- Stir in mayonnaise, parsley, mustard, salt, and pepper; toss.
