Spicy Ground Beef-Bell Pepper Stir-Fry

Ingredients

  • 2 lb grass-fed ground beef
  • 2 Tbsp dark sesame oil
  • 2 red bell peppers, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • ½ cup coconut aminos
  • ½ cup organic chicken broth
  • 1 Tbsp Sriracha hot sauce
  • 2 Tbsp arrowroot

Instructions

  1. Cook beef in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until browned and crumbly. Remove from skillet.
  2. Add bell pepper, onion, and garlic to skillet; cook 8 minutes or until tender.
  3. Whisk together coconut aminos, broth, hot sauce, and arrowroot in a small bowl until blended.
  4. Add beef and sauce mixture to skillet. Bring to a boil; cook 1 to 2 minutes, stirring constantly, or until sauce is thickened.

Side Dish Ingredients

  • 2 lb broccoli rabe, trimmed and cut into 2-inch pieces (or use broccoli florets)
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • ¾ tsp garlic salt

Side Dish Instructions

  1. Steam broccoli rabe in a steamer basket over boiling water 4 minutes or until tender.
  2. Transfer to a large bowl; add oil, lemon juice, and garlic salt; toss.
