Roasted Gnocchi and Sausage

Ingredients
- 1 (16-oz) pkg gnocchi
- 1 cup grape tomatoes
- 1 large onion, sliced
- 2 Tbsp olive oil, divided
- ½ tsp Italian seasoning
- ¼ tsp pepper
- 2 Tbsp chopped fresh basil
- 1 (12-oz) pkg Italian style smoked chicken sausage, sliced
Instructions
- Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
- Toss together gnocchi, tomatoes, onion, ½ Tbsp oil, Italian seasoning, and pepper. Spread in a single layer on baking sheet.
- Bake 20 to 22 minutes, stirring halfway through baking, until gnocchi is plump and vegetables are tender. Toss gnocchi mixture with 1½ Tbsp oil and basil.
- Meanwhile, cook sausage in a large skillet coated with cooking spray over medium-high heat 8 minutes or until browned. Toss with gnocchi mixture. Serve immediately.
