Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- 1 shallot, chopped
- 1 clove garlic, minced
- 2 Tbsp white wine
- ¼ cup heavy cream
- 2 Tbsp Dijon mustard
- 2 tsp chopped fresh thyme
Instructions
- Pound chicken to a ½-inch thickness in a zip-top plastic bag using the heel or your hand or a meat mallet. Sprinkle with salt and pepper.
- Cook chicken in hot oil in a large skillet over medium-high heat 2 minutes per side or until browned. Add shallot and garlic; cook 2 to 3 minutes or until tender.
- Stir in wine, scraping skillet to loosen browned bits. Add cream, mustard, and thyme. Cook 4 to 6 minutes or until sauce is thickened.

- ¼ cup buttermilk
- 1 cup baby spinach
- 1½ Tbsp butter
- 1 Tbsp chopped fresh thyme
- ⅛ tsp salt

Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large saucepan. Cook 12 to 14 minutes or until tender; drain.
- Add buttermilk, spinach, butter, thyme, salt, and pepper. Mash with a potato masher to desired smoothness.
