Asian Pork Chops
Radish-Cucumber Slaw
Ingredients
- 2 lb thin boneless pork chops
- ½ cup low-sodium soy sauce
- ¼ cup honey
- ¼ cup rice wine vinegar
- 1 Tbsp minced ginger
- 3 cloves garlic, minced
- ½ tsp chopped fresh or dried rosemary
- 1 Tbsp arrowroot
- 2 Tbsp water
- 1 green onion, chopped
Instructions
- Place pork chops in a large zip-top plastic freezer bag.
- Combine soy sauce, honey, vinegar, ginger, garlic, and rosemary in small bowl; pour over pork chops. Cover and chill 30 minutes.
- Heat a large skillet over medium-high heat; remove pork from marinade, reserving marinade.
- Cook pork chops 2 to 3 minutes per side or until done; remove and keep warm.
- Whisk together arrowroot and 2 Tbsp water; add to skillet with reserved marinade.
- Cook marinade 5 minutes or until boiling and thickened; pour over pork. Sprinkle with onion before serving.
Side Dish Ingredients
- 2 Tbsp rice wine vinegar
- 2 Tbsp extra virgin olive oil
- 1 tsp honey
- ¼ tsp salt
- ½ tsp pepper
- 1 organic cucumber, thinly sliced
- 1 cup thinly sliced radishes
- 1 organic red bell pepper, thinly sliced
- 2 green onions, chopped
Side Dish Instructions
- Whisk together vinegar, oil, honey, salt, and pepper in a large bowl.
- Add cucumber, radishes, bell pepper, and onions; toss. Let stand until ready to serve.
