Asian Pork Chops

Radish-Cucumber Slaw

Ingredients

  • 2 lb thin boneless pork chops
  • ½ cup low-sodium soy sauce
  • ¼ cup honey
  • ¼ cup rice wine vinegar
  • 1 Tbsp minced ginger
  • 3 cloves garlic, minced
  • ½ tsp chopped fresh or dried rosemary
  • 1 Tbsp arrowroot
  • 2 Tbsp water
  • 1 green onion, chopped

Instructions

  1. Place pork chops in a large zip-top plastic freezer bag.
  2. Combine soy sauce, honey, vinegar, ginger, garlic, and rosemary in small bowl; pour over pork chops. Cover and chill 30 minutes.
  3. Heat a large skillet over medium-high heat; remove pork from marinade, reserving marinade.
  4. Cook pork chops 2 to 3 minutes per side or until done; remove and keep warm.
  5. Whisk together arrowroot and 2 Tbsp water; add to skillet with reserved marinade.
  6. Cook marinade 5 minutes or until boiling and thickened; pour over pork. Sprinkle with onion before serving.

  • 2 Tbsp rice wine vinegar
  • 2 Tbsp extra virgin olive oil
  • 1 tsp honey
  • ¼ tsp salt
  • ½ tsp pepper
  • 1 organic cucumber, thinly sliced
  • 1 cup thinly sliced radishes
  • 1 organic red bell pepper, thinly sliced
  • 2 green onions, chopped

Side Dish Instructions

  1. Whisk together vinegar, oil, honey, salt, and pepper in a large bowl.
  2. Add cucumber, radishes, bell pepper, and onions; toss. Let stand until ready to serve.
