Steak Soft Tacos

Mexican Rice and Spicy Pinto Beans

Ingredients

  • ¾ lb boneless top sirloin 
  • ½ Tbsp Mexican seasoning
  • 2 Tbsp olive oil, divided
  • ½ onion, thinly sliced
  • 1 (8-oz) pkg sweet mini pepper rings
  • ½ (12-oz) pkg soft taco size flour tortillas
  • ½ (16-oz) container fresh salsa
  • 1 cup shredded Mexican cheese blend
  • ¼ cup sour cream

Instructions

  1. Cut beef into thin strips; sprinkle with seasoning. Cook beef in 1 Tbsp hot oil in a large skillet over medium-high heat to desired doneness; remove from skillet.
  2. Cook onion and bell peppers in 1 Tbsp hot oil in same skillet over medium-high heat until vegetables are tender.
  3. Heat tortillas according to package directions.
  4. Serve beef in tortillas with vegetables, salsa, cheese, and sour cream.

Side Dish Ingredients

  • 1 (6.4-oz) box Mexican rice
  • 1 (15.5-oz) can pinto beans, drained
  • 1 (4-oz) can chopped green chiles
  • 1 tsp ground cumin
  • ¼ cup water

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook beans, chiles, cumin, and water in a medium saucepan until thoroughly heated.
