Snickerdoodle Cookie Bars
Ingredients
- 1 cup butter, softened
- 1¼ cups plus 1 Tbsp sugar, divided
- 2 large eggs
- 1 tsp vanilla extract
- 2¼ cups all-purpose flour
- 1½ tsp ground cinnamon
- 1 tsp salt
- 2 tsp baking powder
Instructions
- Preheat oven to 350°F. Coat an 8-inch round baking dish with cooking spray.
- Beat butter at medium speed with an electric mixer until smooth and creamy. Add 1¼ cups sugar, and beat until fluffy. Add eggs and vanilla; beat well.
- Add flour, ½ tsp cinnamon, salt, and baking powder. Beat until blended. Spread dough in prepared dish. Stir together 1 Tbsp sugar and 1 tsp cinnamon. Sprinkle over dough.
- Bake 28 to 30 minutes or until golden brown and center is set. Cool completely. Cut into bars or wedges. Serve slightly warm with ice cream, if desired.
