Bacon-Blue Cheese Steakhouse Salad

Ingredients

  • 4 slices center cut bacon
  • 1½ lb sirloin steak
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped fresh thyme
  • 2 (8.5-oz) pouches ready penne pasta
  • 1 (10-oz) pkg spinach
  • ½ cup dried cherries
  • ½ cup sliced almonds
  • ½ cup crumbled blue cheese

Instructions

  1. Cook bacon in a large nonstick skillet over medium-high heat 6 minutes or until crisp; drain, reserving drippings in skillet. Coarsely crumble bacon.
  2. Sprinkle steak with salt and pepper. Cook steak in hot drippings in skillet 5 to 6 minutes per side or to desired doneness. Sprinkle with thyme. Let stand 5 minutes before slicing across the grain.
  3. Meanwhile, cook pasta according to package directions. Toss pasta with spinach. Top pasta with steak; sprinkle with cherries, nuts, bacon, and cheese.
