Sheet Pan Ham and Swiss Sandwiches

Ingredients

  • 12 slices Italian bread
  • 6 Tbsp mayonnaise
  • 1 lb sliced low-sodium ham
  • 1½ cups baby spinach
  • 1 cup roasted red peppers, patted dry
  • 6 slices Swiss cheese

Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper.
  2. Place 6 bread slices on paper. Spread mayonnaise on bread. Top with ham, spinach, peppers, cheese, and 6 bread slices.
  3. Bake 20 minutes or until bread is toasted and cheese is melted.

Side Dish Ingredients

  • 3 Ruby Red grapefruit, halved
  • ¼ cup packed brown sugar

Side Dish Instructions

  1. Preheat oven to 350°F. Cut a thin slice from the bottom of each grapefruit half. Place grapefruit, cut sides up, on a foil-lined rimmed baking sheet.
  2. Sprinkle with brown sugar. Bake for 15 to 18 minutes or until sugar begins to bubble and caramelize.
