Korean Mini Meat Loaves

Ingredients

  • 1½ lb lean ground beef
  • 2 large eggs, lightly beaten
  • 1½ cups panko breadcrumbs (preferably whole wheat)
  • ¼ cup low-sodium soy sauce, divided
  • 2 Tbsp minced garlic
  • 1 Tbsp ginger paste
  • ½ tsp pepper
  • 2 Tbsp honey
  • 1 Tbsp gochujang (Korean chile paste)

Instructions

  1. Preheat oven to 450°F. Gently combine beef, eggs, panko, 2 Tbsp soy sauce, garlic, ginger paste, and pepper using your hands. Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
  2. Whisk together 2 Tbsp soy sauce, honey, and gochujang; brush on loaves.
  3. Bake 20 minutes or until no longer pink in centers.

  • 2 heads broccoli, cut into spears
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame seeds
  • ½ tsp kosher salt
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer.
  2. Bake 14 minutes or until well browned, stirring once during last 2 minutes of baking.
