Korean Mini Meat Loaves
Roasted Sesame Broccoli SpearsIngredients
- 1½ lb lean ground beef
- 2 large eggs, lightly beaten
- 1½ cups panko breadcrumbs (preferably whole wheat)
- ¼ cup low-sodium soy sauce, divided
- 2 Tbsp minced garlic
- 1 Tbsp ginger paste
- ½ tsp pepper
- 2 Tbsp honey
- 1 Tbsp gochujang (Korean chile paste)
Instructions
- Preheat oven to 450°F. Gently combine beef, eggs, panko, 2 Tbsp soy sauce, garlic, ginger paste, and pepper using your hands. Shape mixture into 6 small loaves. Place on a wire rack on a foil-lined rimmed baking sheet.
- Whisk together 2 Tbsp soy sauce, honey, and gochujang; brush on loaves.
- Bake 20 minutes or until no longer pink in centers.

- 2 heads broccoli, cut into spears
- 2 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp sesame seeds
- ½ tsp kosher salt
- ¼ tsp crushed red pepper
Side Dish Instructions
- Preheat oven to 450°F. Combine all ingredients on a rimmed baking sheet; spread in a single layer.
- Bake 14 minutes or until well browned, stirring once during last 2 minutes of baking.
