Cheese Tortellini Soup with Kale

Ingredients

  • 4 Italian smoked chicken sausage links, sliced
  • 2 Tbsp olive oil
  • 2 cups chopped onion
  • 8 cloves garlic, minced
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (28-oz) can whole peeled tomatoes, drained and crushed
  • 1 (20-oz) pkg refrigerated cheese tortellini
  • 3 cups baby kale
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Sauté sausage in hot oil in a large Dutch oven over medium-high heat 6 minutes or until lightly browned.
  2. Stir in onion and garlic; cook 2 minutes. Stir in broth and tomatoes. Bring to a boil, reduce heat to medium, and simmer 15 minutes.
  3. Stir in pasta; cook 5 minutes or until thoroughly heated. Remove from heat; stir in kale. Serve sprinkled with cheese.

  • 1 loaf crusty Italian bread

Side Dish Instructions

  1. Heat bread, if desired. Tear or slice before serving with soup.
